I am sure that you can go a tad faster than 7:45.700 at the Nordschleife in a car with nearly 600BHP. But I like your setup thou.
Being a guy from Denmark it`s quite unusual that I fancy a Swedish driver named Mathias Ekstrøm but he is so extremly good that I can do nothing but admire him(He beats TomK in every race)then you are really good.

Is there anyway of getting rid of the understeer out of the corner. I can't get back on the gas until all the way out the corner and straight again.
Speed is what moves us all.

Yez, you can get rid of understeer out of corners...
Eaze of the throttle... Disgusted My best shoot, it's a 4WD car, they have a tendency to understeer out of corners.
Otherwise try to stiffen the springs at the rear, or soften the springs at the front.
Also work with the stabilizers...
