You might want to tweak the transmission a bit by raising the autoset to your likings.
Also, increase the camber angles to each wheel. Trial and error helps is usually how I do it.
Put some negative toe on the rear wheels, and a little positive toe on the fronts.
Tires are a problem in 2 player, since you're not allowed racing slicks. I hate Polyphony for forgetting that stuff. The ECS and the ASM are set weirdly too in 2 player. I tend to shy away from 2 player because it really throws off your setups. I would tell you to up the ECS to try and control wheelspin, but I don't know how to set it up for 2 player.
In any case, trial and error really is the key.
